Vegan Buddha Bowl 🌱




Ingredients:

✨2 Sweet Potatoes

✨2 Shallots

✨3 cups broccoli

✨Vegan kale pesto (Find at Trader Joes)

✨Avocado Oil

✨Susie Q for seasoning or S & P

✨Fermented Sauerkraut

✨Broccoli Sprouts

✨Mixed Greens

✨Tahini

✨Hemp Seeds

✨Optional: Avocado, Ground beef, Quinoa, Rice, etc,.


Cooking Instructions:

✨Peel and chop your sweet potatoes into small chunks. Sauté with shallots in a cast iron pan. I use avocado oil for the pan and Susie Q for seasoning. Cook on pan until desired crispness.

✨Steam broccoli in a pan by adding 1/4 cup water and covering the pan with a lid. Allow the broccoli to steam. Once the broccoli is cooked, add salt and pepper and 1/4 cup of the Kale Pesto.


Build your Bowl:

✨Create a BASE of mixed greens.

✨Fill your bowl with desired amount of broccoli, sweet potatoes and sauerkraut.

✨Add avocado, sprouts, and hemp seeds.

✨Drizzle tahini dressing over the top with a pinch of salt and pepper!

✨ENJOY!!!

✨If you’re looking for more protein, add some type of meat. I think ground beef or bison would taste amazing in this type of bowl seasoned with cumin and chili powder.

✨If you need to carb up, add some quinoa cooked in chicken broth or basmati rice!
