Cauliflower Rice Stir Fry 🥟



I’m a sucker for stir fry. When you don’t know what to do with your left over veggies… throw it all together and… “wrist twistin' like a stir fry.” 🎶


Veggie Stir Fry Medley 🥦

✨Onion & Garlic

✨Broccoli

✨Bell Peppers

✨Snow Peas

✨Carrots

✨Bean Sprouts

✨Swiss chard

✨My mom loves to add baby corn and jicama!


Directions:

✨If you want to cook all of your veggies in one pan, start with the veggies that take the longest to cook! I would start by steaming the broccoli with some water in the pan and the lid covered. Once you can put a fork through the broccoli, add in your other veggies. In this case I added the onion, garlic, red bell peppers, and carrots. After about 5 minutes I added the snow peas and Swiss chard. I added the bean sprouts last so they would still have a fresh crunch! Season with Susie Q and soy sauce OR coconut aminos for a sweeter flavor.


Cauliflower Rice: 🍚

✨Cauliflower Rice

✨1-2 eggs

✨soy sauce, liquid aminos, or coconut aminos

✨1/4 cup green peas

✨1/4 cup chopped carrots

✨S & P

✨Avocado Oil

✨Sesame Seed Oil


Directions:

✨Oil the pan with avocado oil, sauté the cauliflower rice, green peas, and carrots until warm and slightly browned.

✨Push all of the ingredients to the side of the pan and make a hole for the egg! Scramble in the middle. When the egg is cooked, mix in with the cauliflower rice.

✨Drizzle 1 tsp sesame seed oil on the top.

✨Season with S & P.


Chicken: 🐣

✨Chicken breast

✨onion

✨garlic

✨Avocado oil


Directions:

✨Drizzle avocado oil on the pan as it is heating up!

✨Cut the chicken breast into bite sized pieces and place on the pan.

✨Sauté with garlic and onion.

✨Season with Susie Q or your style seasoning.
