Spring Rolls with Peanut Thai Sauce 🥜



Spring rolls:

✨Prep thinly sliced bell peppers, Persian cucumbers, and avocado.

✨Sauté thinly sliced chicken breast in pan with coconut aminos and seasoning. (Or use a rotisserie chicken)

✨Chop basil, mint, & cilantro

✨Place rice paper wrap in a bowl of warm water. (Follow directions on package)

✨Place ingredients in the wrap and roll it up!!


Thai Peanut Sauce:

🥜 1/3 cup peanut butter

🥜1/4 cup water

🥜2-3 tbs soy sauce

🥜 1 tbs honey

🥜 2 tbs fresh lime juice

🥜 2 small garlic cloves

🥜 fresh ginger

🥜 3 tbs white wine vinegar

🥜 1 tbs sesame seed oil


Side dish ideas:

🍚 rice

🍲 miso soup

✨ edamame
