Spring Break Salad 🌻

Ingredients:

✨Mixed Greens

✨Broccoli Sprouts

✨Arugula

✨1/2 cup Orzo Pasta Salad (recipe below)

✨Persian Cucumber

✨Avocado

✨Sunflower Seeds

✨Almond Slivers

✨Fresh Deli Turkey Meat

✨Diced Red Onion

✨Lemon Olive Oil

✨Balsamic

✨Salt & Pepper!


Extra Ingredients:

✨Heirloom tomatoes

✨Crumbles Goat Cheese!


Chickpea Orzo Pasta RECIPE! YUM!

Ingredeints:

✨Jovial Cassava Orzo

✨Chickpeas

✨Persian Cucumber

✨1/2 Red Onion

✨2-3 Cups Arugula

✨1 cup Basil

✨1/4 cup mint

✨1 Lemon

✨Olive Oil

✨Salt & Pepper

✨Feta or Goat Cheese


Directions:

✨Prep the orzo pasta according to the package instructions. Drain, rinse, and chill pasta.

✨Drain and rise the garbanzo beans.

✨Chop the cucumber, red onion, and herbs!

✨Combine all of the ingredients in a large bowl. Toss with olive oil, salt, pepper, and a squeeze of lemon juice!

✨Add arugula last!
