Cashew Chicken Jicama Cups đĽŹ

Ingredients:
â¨Jicama Wraps OR Butterhead Lettuce
â¨2 large chicken breast
â¨1-2 tbs avocado oil
â¨2 tbs sesame oil
â¨1 diced shallot
â¨3-4 cloves chopped garlic
â¨2-3tbs peeled & chopped ginger
â¨1/4 cup coconut aminos
â¨1 tbs arrowroot starch mixed with 3 tbs water (thickener)
â¨1/3 cup roasted cashews
â¨S & P
Toppings:
â¨Green Onion
â¨Thinly sliced red bell pepper
â¨Avocado
â¨Roasted Cashews
Directions:
â¨Chop chicken into small, bite sized pieces.
â¨Heat avocado oil and add chicken to the pan. Sprinkle with Susie Q!
â¨Add the shallots, garlic, and ginger.
â¨When chicken is half way done, add the coconut aminos and arrowroot thickener. (Dissolve arrowroot power and water in a small bowl before adding to the chicken!)
â¨Build your Jicama Tacos!
â¨Add the chicken, avocado, green onion, red bell pepper, and roasted cashews to the top!
