Cashew Chicken Jicama Cups 🥬

Ingredients:

✨Jicama Wraps OR Butterhead Lettuce

✨2 large chicken breast

✨1-2 tbs avocado oil

✨2 tbs sesame oil

✨1 diced shallot

✨3-4 cloves chopped garlic

✨2-3tbs peeled & chopped ginger

✨1/4 cup coconut aminos

✨1 tbs arrowroot starch mixed with 3 tbs water (thickener)

✨1/3 cup roasted cashews

✨S & P


Toppings:

✨Green Onion

✨Thinly sliced red bell pepper

✨Avocado

✨Roasted Cashews


Directions:

✨Chop chicken into small, bite sized pieces.

✨Heat avocado oil and add chicken to the pan. Sprinkle with Susie Q!

✨Add the shallots, garlic, and ginger.

✨When chicken is half way done, add the coconut aminos and arrowroot thickener. (Dissolve arrowroot power and water in a small bowl before adding to the chicken!)

✨Build your Jicama Tacos!

✨Add the chicken, avocado, green onion, red bell pepper, and roasted cashews to the top!
